
I got an order for some garlands on etsy so I have been ripping and knotting for the past 24 hours! I love how the Christmas one turned out! I listed an extra in my etsy shop if y'all want to show me some $$ lovin'!
Now, the story of a muffin...
Last week while Aaron's mom was visiting I made the comment to Aaron that our bananas were rotten and we needed to throw them away. That was when Aaron said "don't throw them away, my mom can make banana bread"... ooooh as if I wasn't already stressed he goes and throws in the "my mom can bake better than you" line! Well he didn't actually say that (or mean that) but that is how my overstressed brain took it. So I said... "I know how to make banana bread! SHEESH!"
So I fished the bananas out of the garbage (hey they have skin!) and set them back on the counter. It took me 1/2 a week to actually do something with them (yes, they were black) but this is what I made...
Banana Crumb Muffins
INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
DIRECTIONS
Preheat oven to 375 degrees F. Lightly grease 10 muffin cups, or line with muffin papers.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

If you only knew how many bananas I've wasted cuz I'm too lazy to do something with them. I always try to find the greenest bunch.

My bananas are browning as I type... We only eat GREEN bananas, so yellow and certainly brown are no good here, except for banana muffins! Now I am hungry!
ok-I wish that we were neighbore-why? I could swoon in person-yea-the swag will be darling in a la babies room. The muffins-they look delish and I am pretty sure that they tasted as yummy as they looked-plus-if we were neighbors, you could have just called me when you found those cute little towells and i would have ran my little butt to target then! Now-alas they are all gone and i must look lovingly at the muffins and the owl and wish that we were closer!
Love the garland! A friend and I are going to try our hand. But I really want to thank you for the muffin recipe. I had bananas sitting on the counter that needed to go and I do not like my old banana bread recipe. You saved the day! They are delicious!
I made these this morning and I ate FOUR.... yes FOUR... My mouth thanks you, my stomach loves you, my thighs hate you... hahahaha... Thanks for sharing your recipe and mushy brown bananas! ;)
